AMARANTH CUPCAKES WITH RASPBERRIES

AMARANTH CUPCAKES WITH FREEZE DRIED RASPBERRIES
Ingredients for the cases:
3/4 cup of whole meal flour, 1/2 cup of amaranth flakes, 4 tbspoons of brown sugar, 3 tbspoons of double cream, 70g of butter
Mix flour, amaranth flakes, sugar and cream with melted butter until all the ingredients are combained. Divide ready mixture into 6 equal parts and crush with your fingers into the buttered cupcake moulds. Bake at 200 degrees for about 25 minuts.
Ingredients for the almond paste:
50g of ground almonds, 100ml of fresh cream, 2 teespoons of brown sugar, freeze dried raspberries
Mix ground almond, cream and sugar and heat up very gently until thicken a bit. Cool down the mixture. Spoon the almond into the already baked cases and decorate with freeze dried raspberries.
Kids will love the crunchy texture of the freeze dried raspberries. You can have fun and experiment with different fruit like blueberry or strawberry.
